Arising from a spontaneous cross between water mint and spearmint, peppermint is a highly aromatic plant: the adjective ‘peppery’ describes precisely the penetrating and intense note of its flavour and scent. The leaves are used to make an infusion with a pleasant and unmistakable flavour: refreshing and soothing, to be enjoyed at any time of day and particularly after meals. It is delicious served hot, but also cold, especially in summer, for a pleasant, refreshing and thirst-quenching break.

To make a delicious infusion, pour boiling water into a cup (approx. 150 ml), add 1 tea bag and leave to steep for 3–5 minutes; cover the cup to prevent the more volatile compounds from escaping.

Before removing the tea bag, press it gently with the back of a teaspoon. Use 1 tea bag per cup.

The resulting infusion can be enjoyed plain or sweetened to taste.
